It's worth looking at this site - they have a good set of stats and articles on the game throughout the world - starting at the beginning, they've got as far as around 1900-1910. See this for example for some good stuff on early Scottish players:-

I would treat this website, its content and organisation with extreme caution. They seem to have "Tony Matthews" standards of research.

The IFFHS published some interesting material 10-15 years ago. Some pieces can be found on their website. They ran into financial difficulties ca. 10 years ago. Since then it's a one man organization ( Dr Alfredo W. Pöge) who seems to think he's an offial FIFA historian. The quality of their publications varies... (and they still owe me some money)
