It's hard to say for certain but since the establishment of the Scottish league three at least.

A player called Morton scored three against Kilmarnock Athletic on Aug 30th 1884 but it's not certain whether or not this was his first match as records weren't kept all that well in the 1880s.

There was a player named Law who scored three on his LEAGUE debut against Vale of Leven on Feb 13th 1892 but he had played twice earlier that season in the Scottish Cup.

Probably the first was John Gray who scored three away to Dundee in the opening League match of the season on Aug 12th 1893.

As far as I can make out the next player to do so was Colin Stein in the League in a 5-1 win at Arbroath on November 2nd 1968.

Finally Kris Boyd did so yesterday (Jan 7th 2006) in a 5-0 win over Peterhead at Ibrox in a Scottish Cup tie.
